This thematic area includes the qualitative and quantitative description and analysis of the relationships between the carriage of pathogens associated with food-safety issues in animals and human disease. As such this area encompasses risk research, especially hazard assessment.

To ensure comparability of data at the global level sampling methodology for pathogen monitoring must be harmonised. Modern epidemiology is also dependant on the development and application of tools such as geographical information systems (GIS) to locate and track disease.
